I found this recipe for a Cherry Cheesecake Dip and couldn’t wait to try it. The ingredients include Marshmallow Fluff, Cream Cheese, Cool Whip, and Graham Crackers…yep, you read that right. I mean, how can you go wrong with any of those? My in-laws live in one of the greatest neighborhoods here in the ‘burbs, and they have an annual Christmas Brunch. The hostess asked me to bring a dessert and the Cherry Cheesecake Dip instantly popped into mind. I’m doing the slow-carb diet with Andrew so I couldn’t try it, but I did ask the guests to be brutally honest with me when they tried the dip. RAVE REVIEWS. Everyone said it was super delicious, not to rich, light and fluffy, and was just all around good. The only negative I did hear was dipping the graham crackers, per the original recipe, wasn’t truly necessary. I think graham crackers have lost a big of their flavor over the years, with the introduction of whole grains (not that it’s a bad thing), so that doesn’t surprise me. So if you do plan to fix it, you can go with or without the graham cracker sticks, completely up to you. I do have to say that I think chocolate graham cracker sticks would be a heavenly addition. Try it out, let me know what you think.
So here’s what you’ll need and how to fix this super quick, easy & delicious dip:
Ingredients:
Making the Goodness
- Crush two sleeves of graham crackers to serve as your base. I used my Vitamix to get them to a nice crumbly state. I would use your food processor, if you don’t have a Vitamix, to get it to a nice crumbly state.
- Pour the graham crackers into the bottom of the dish. Don’t push them down, they don’t need to be packed in the dish, just poured in there evenly.
- Then, slowly add in your cool whip with your cream cheese and marshmallow blend. Not all at once, just a little at a time and mix well. Again, no mixer/beater necessary.
- Here comes one of the most important parts…are you paying attention? Good! Okay, so be sure when you pour your fluffy mixture over top of the graham cracker base, be sure to pour most everything on the outsides of the dish. I know human nature is to start at the middle and go out, fight the urge. If you don’t, you’ll end up mixing all of the fluffiness with the graham crackers and then you won’t have the nice layers you want. Believe me, she warned me, and I almost did it but caught myself in the nick of time. So pour on the outsides and work your way to the middle spreading the fluffy wonderfulness over the graham cracker crust.
- And lastly, crack open your cans of cherry pie filling and spread them over the top of the fluffiness. Be sure to spread them out evenly so there isn’t a large concentration of cherries on one section of the dip.
Mix your softened cream cheese and marshmallow creme (fluff) in a large bowl. Just use a spoon or spatula, no mixer/beaters necessary.
That’s it! Easy peasy right? I put mine in the fridge until I was ready to head out to the holiday brunch. I put it out around 12:30pm and when I left at 4:00pm folks were still digging in! It only took me about 15 minutes to fix, tops! So it truly was a nice and easy dip, not to mention it’s really pretty when you put it out on a Christmas table. I bet it would look great in a glass dish or white dish! oooo the red cherries popping off of the white color of the dish. Don’t forget to break off the graham crackers into single sticks (since I can’t find the sticks anymore booo) if you plan to use and put them out with the dessert. Anyhoo, give it a whirl and let me know if folks loved it as much as they did at the holiday brunch this past Sunday.

Instead of breaking the crackers into sticks. I bought bags of Teddy Graham crackers. They taste the same and are cute too!

This dip really is easy and delicious! Thinking of trying it with the white chocolate cream cheese. If you don’t want to use Graham’s but still want something to dip in it vanilla wafers are a yummy option . 🙂
Oooooo vanilla wafers would be an awesome option. And I’ve never had the white chocolate cream cheese but it sounds ridiculously good!!!
What do you mean when you say you can go with or without the graham sticks? If you didn’t dip them into it, would you just serve the dip as a sort of dessert square that you would eat with a fork?
Yea! I had a lot of folks that just piled a spoonful on their plate and ate it by the fork/spoonful 🙂
It looks pretty and so delicious! And I love that it makes a 9 x 13 size! I have a big family, so these 8 x 8 recipes rarely do it for me.
