{Poblano-lime Alfredo Rib Eye Tips}

Ladies, I am one lucky woman. I truly am. I walked in the house tonight, after a very long day and my realized my husband was out in the pouring rain grilling steaks! I yelled out to him from our living room window “Lover, why are you outside grilling in the pouring rain? You are NUTS!” He replied “I have a romantic dinner planned for us and I’m not letting a little rain ruin it!” He’s truly the best. Come to find out my husband decided to make beef rib eye tips with egg noodles and a Poblano-lime Alfredo sauce. YUMMY!!!

So here’s a quick and easy recipe for those nights after work when you don’t know what to fix!

I recently started purchasing the thin cut Rib Eyes from Safeway. The come in a package of four and provide such a better taste when grilling. We all know Rib Eyes can be a pain, and require quite a bit of marinating, but these don’t. They are fantastical for grilling. We throw a little Dale’s on them (for about 20 minutes) and then we grill them fairly quickly.

While the steaks are grilling (they only take about 4-6 minutes if you like them medium rare) make sure you are cooking your egg noodles. Then, its time for the secret sauce.

No? Its only the best kept secret in cooking!! This Roasted Poblano Alfredo sauce from Classico is money!!! My hubby added a little bit of fresh-squeezed limed juice to it, and warmed it up in a saucepan.

He cut the steak up into bite-sized pieces, threw them on top of the cooked egg noodles, and poured the delicious “homemade” sauce on top. Viola! Wonderful, delicious, and unexpected dinner. I hope you like it!! 🙂
