{Easy Slow-Carb Sausage & Peppers Dinner}

I promised to share some of my super easy and slow-carb friendly dinners with you and this is one of the easiest and yummiest. This recipe is actually supposed to be served over bow-tie pasta, but we all know I can’t have pasta (though it is REALLY good over pasta). Anyhoo, here’s what you’ll need to fix my:

Slow-Carb Friendly Sausage and Peppers Dinner

  • 1 sliced green pepper
  • 1 sliced red pepper
  • 1 sliced orange or yellow pepper
  • 1/2 small chopped onion
  • 1 package of Hillshire Farms Lil Smokies
  • 1 package of Hillshire Farms Beef Smoked Sausage, cut into 1 inch thick pieces
  • Fresh Black Pepper
  • 1/4 cup Beef Stock
  • Chopped Parsley
  • In a large saute pan, cook the smoked sausage, Lil’ Smokies, and onion over medium-high heat.
  • Once the sausage is heated through, add in the peppers, fresh black pepper (I just crank my pepper mill a few times), the beef broth and fresh parsley (I usually substitute fresh parsley with Gourmet Garden Parsley).

  • Let that cook (boil really) for a 5 minutes or so and you’re ready to go! Super easy huh? If you aren’t slow-carb’ing you could just start cooking your pasta before you start cooking the sausage. Then, once the sausage mixture is ready, pour it over the pasta. Yumlicious.

    So give it a whirl and let me know what you think. My husband says this is one of his faves. 🙂
