* For some of you this is probably not a new recipe and a total no brain-er, but it was new for me so I’m sharing. 🙂 *
I have a quick grilled chicken recipe for you guys this evening. This morning I threw a pound of thawed, butterflied, chicken breast (3 breasts) into a Ziploc bag and poured Jose Cuervo Margarita Mix over the breasts until it covered them (a little over half a large bottle). Zipped up the bag and let them sit in the fridge all day while I was at work (about 10 hours). When my husband the Grill Master arrived home, he pulled them out of the fridge and threw them onto the grill (for about 8 minutes each side). Ummmm YUM!!! What a great light flavor! Not too bold, not too absent, just enough for you to get a great taste and oh so juicy!! I would totally recommend these during the summer, for tailgating, or during the winter when you’re dying for a little taste of the beach/summer.
For a side we just sliced up some red peppers, yellow peppers, and yellow squash and put them into a foil packet (we make our own, we’re crafty like that). We sprinkled them with a bit of Greek Seasoning and a slice of butter, then put them on the grill for about 5 minutes before the chicken was done.
Yumlicious dinner and so easy! I’m definitely going to try some of the other margarita mixes and also maybe squeeze some lime over them next time while they are on the grill and see where that takes us. Who doesn’t love super easy grilling?!?!?
